Banana Cranberry Loaf (Squirrelly Cakes)

1/4 cup melted butter
1 cup granulated white sugar
2 eggs
3/4 cup mashed very ripe bananas - about 2 or 3
1 cup chopped up (I halve them) cranberries, fresh or frozen
1 1/2 cups all-purpose flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon

Put butter, sugar and 1 egg in mixing bowl and beat until smooth. Beat in second egg and stir in bananas. I usually sprinkle a wee bit of sugar on the cranberries and add them to the mix. In another bowl stir together the flour, baking soda, baking powder, salt and cinnamon. Add all at once to the other mixture, whisking only to combine. Pour into a greased and floured 9x5x3 inch deep loaf tin and bake in a preheated to 350F oven for 1 hour or until toothpick inserted in centre comes out clean. Let stand in the pan for 10 minutes before removing to a cooling rack. Wrap when cool. Freezes very well for up until 2 months.
