Carrot Loaf (Squirrelly Cakes)
1 1/2 cups
Crisco oil
2 cups of granulated white sugar
4 large eggs
Mix these items together in a bowl.
In another bowl, stir together:
3 cups all-purpose flour
2 tsp. baking powder
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
Now mix the two mixtures together.
Add 3 cups of grated carrots. You may add nuts and raisins if desired - about
1/2 cup of each.
Grease and flour 2, 9x5x3 inch loaf tins or 1, 9x13 inch pan and bake in a
pre-heated oven at 350F 45-60 minutes for the loaves or about 1 hour for the
sheet pan. test by inserting a toothpick in the centre and it should come out
clean when the loaves or cake is done. Cool 10 minutes in pan and remove to rack
to cool completely. Freezes well for up to 2 months.
