Coca Cola Cakes (3 Versions)

Coca Cola cake – Version 1

 1 Cup butter, room temp
1 3/4 cup sugar
2 eggs
1 teaspoon vanilla
2 cups sifted flour
3 Tablespoons cocoa
1 teaspoon baking soda
1/2 cup buttermilk
1 cup coke
1 1/2 cup mini marshmallows

Preheat oven to 350.
Cream butter and sugar. add eggs, blend in vanilla.
Combine flour, cocoa and baking soda.
Add to sugar and butter mixture while alternating with buttermilk.
Add coke, beat well.
Stir in marshmallows.
Pour into greased and floured 9 X 13 pan.
Bake for 35 to 40 minutes.

Icing:

1/2 cup butter
3 Tablespoon cocoa
1/3 cup coke
1 lb of confectioner's sugar
Combine until smooth and ice over cooled cake.

Coca Cola cake – Version 2

2 cups all - purposed flour
2/3 cup Hershey's Dutch Processed Cocoa
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
3/4 cup soft butter
1 3/4 cups sugar
2 tsp. vanilla extract
2 jumbo eggs
1 cup of Coca Cola

Combine all dry ingredients (except sugar) in medium bowl.
Cream well the butter, sugar, and vanilla. Add eggs one at a time. Gradually mix in the dry mixture alternately with the coke. Spread into 13X9 prepared pan or 2 - 9 inch round pans. Bake at 350 for 25 to 35 minutes.

Coca Cola Cake – Version 3

2 Cups flour
1-1/2 tsp baking soda
1 tsp salt
1-1/3 Cup sugar
1/2 Cup cocoa
1/2 Cup shortening
2/3 Cup buttermilk
2/3 Cup coca cola
1 egg
2 egg yolks

Preheat oven to 350º.
Grease and flour two 9” pans.
Sift together the flour, baking soda, salt, sugar and cocoa.
Add to mixing bowl.
At slow speed, add the shortening, buttermilk, and coca cola.
Mix for 2 minutes, scraping bowl as needed.
Add the egg and egg yolks.
Beat for another 2 minutes.
Pour into prepared pans. Bake 30 – 35 minutes.

Coca Cola Frosting

2 egg whites
3/4 Cup sugar
1/3 Cup light Karo syrup
1/3 Cup coca cola
1/4 tsp salt
1/4 tsp cream of tartar

Combine all ingredient in top of double boiler.
Cook over rapidly boiling water, beating continuously with a portable mixer until mixture stands at stiff peaks. Remove from heat and continue to beat until thick enough for speading.
