Date and Nut Loaf (Squirrelly Cakes)
1 1/2 cups chopped dates, all pits
removed
1 cup boiling water plus 1 tsp. baking soda - sprinkle this over the dates
When cool, add:
1 cup granulated white sugar
1 egg
3 tbsp. Crisco shortening or butter, softened
1 1/2 cups of all-purpose flour
1/2 tsp. salt
1 cup chopped nuts - walnuts or pecans
Bake in a greased 9x5x3 inch loaf tin, in a pre-heated 350F oven for about 1
hour or until toothpick inserted in centre comes out clean. Cool 10 minutes in
pan before removing to rack. Let cool completely and wrap. Freezes well for up
until 2 months.
