Dinner Rolls (Rainbow)
1 pkg yeast,
4 cups water
2 cups sugar
1 cup butter
1 Tbs salt
4 eggs
5 lbs flour
1/2 cup butter softened
1 pkg yeast (dissolve in 1/4 cup of warm water)
Boil the following for 5 minutes and allow to cool to room temperature:
4 cups water
2 cups sugar
1 cup butter
1 Tbs salt
Beat 4 eggs and add to yeast.
Mix with rest of ingredients.
Gradually add flour. (You may not need all of the flour. It needs to be somewhat sticky or your rolls will be heavy) I usually have about 1 cup left over?. This will depend on temperature and humidity.
Divide the dough in 1/2 and place in a greased bowl and cover. Let rise in a warm place for 4 hours.
Punch down the dough and let rise another 3.5-4 hours.
Divide each bowl of dough in half.
Roll each half out on a floured surface into a round disc.
Butter the top of the disc and cut into 12 even pieces (Like you would cut a pie).
Next starting at the small end roll up.
Place onto cookie sheet and let rise overnight.
Bake in a 350 degree oven for 10-12 minutes, or until lightly browned. After the rolls are out and on a cooling rack use a pastry brush and brush the softened butter on the top of each roll.
Makes 48 dinner rolls. These freeze well
