Hot Dog Relish (Labrat)
6 quarts green tomatoes
1 quart onions
1 quart cucumbers
4 sweet red peppers
Grind, and put into crock. (I have used a food safe plastic pail) Sprinkle with
1/2 cup coarse pickling salt. Let stand overnight. Drain well (through
cheesecloth)
Syrup:
2 quarts cider vinegar
8 cups white sugar
1 tsp celery seed
Combine with drained tomato/cucumber mix; simmer 45 minutes.
Paste:
2/3 cup flour
1/2 tsp turmeric
water to make a paste
Add to simmering pot, stirring constantly; cook, stirring, until thick.
Pack into clean hot jars; wipe rims. Top with snap lids which have had sealing
compound activated by boiling 5 minutes; screw on bands until just finger tight.
Let sit in draft-free spot on double thickness towels overnight. Check seals.
Remove bands and store in cool, dark place.
