Mincemeat Loaf (Squirrelly Cakes)
2 cups of all-purpose flour
1/2 cup sugar
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
1 egg, slightly beaten
1/4 cup Crisco oil
1 tsp. grated orange rind
2 tbsp. orange juice
2 cups of mincemeat
Sift dry ingredients. Combine liquids. Mix together. Bake in a greased and
floured 9x5x3 inch loaf tin for 60-65 minutes in a preheated to 350F oven. When
toothpick inserted in the centre comes out clean, loaf is done. Cool in pan for
10 minutes and remove to cool on rack. Wrap when completely cool. Freezes well
for up to 2 months.
