Mock Marzipan
Mock Marzipan - Version 1
4 oz
margarine
6 oz sugar
5 oz water
1/2 tsp almond essence
10 oz soya flour
Put margarine, sugar and water in to a saucepan and bring to boil, stirring until margarine melts.
Remove from heat.
Add essence, then gradually stir in flour.
Sprinkle bench surface with flour - add more essence if required - and knead until smooth. [keeps for 2-3 weeks]
Mock Marzipan - Version 2
1 egg
2 oz sugar
4-5 oz cake crumbs
2 oz breadcrumbs
almond essence
Whisk egg and water in a bowl over hot water until thick and frothy.
Remove from heat and work crumbs into the mixture until the right consistency.
Flavor with almond essence. [keeps for 2-3 weeks]
