Pastry Cream

1 liter milk
125 g sugar
4 egg yolks
2 whole eggs
75 g cornstarch
125 g sugar
62.5 g butter
15 ml vanilla

1. In a heavy sauce pan, heat together milk, and first amount of sugar.
2. In a bowl, mix yolks and whole eggs.
3. In another bowl, combine cornstarch and sugar. Then mix with a wire whisk the egg mixture.
4. When milk is heated enough, temper the eggs with a small portion of the warm mlk then when mixed, add this mixture in the heated milk. Stir until mixture thickens and starts to boil.
5. Take the saucepan off the flame and transfer the mixture into a big bowl. Place butter and vanilla on top and let stay for about 5 mins. then fold in the melted butter and vanilla into the mixture until well incorporated. Place plastic wrap directly on the mixture and chill.
