Peanut Butter Cookies On A Stick (Squirrelly Cakes)
 

1 cup butter, softened
1 cup brown sugar, packed
1 cup white granulated sugar
2 large eggs
1 cup of smooth peanut butter
3 cups all-purpose flour
2 tsp. baking soda
1/4 tsp. salt


Cream softened butter, and sugars together. Beat in eggs, one at a time. Mix in the peanut butter. Stir in flour, baking soda and salt. Shape into 1 rounded tsp. small balls for regular cookies or for cookies on a stick, using 1/3 cup of dough, make cookie dough balls. Place balls on ungreased cookie sheets, 2 inches apart or place larger cookie balls with stick inserted in centre on cookie sheet, stick on the side. Press to about 1/4 inch thick using bottom of a glass. Press smaller cookie balls with a fork dipped in flour. Bake in pre-heated 375F oven for 12-15 minutes. Makes about 6 dozen regular sized cookies. Again, let cool about 5 minutes on cookie sheet and transfer to cooling rack using a spatula under the cookie and stick.
Variations for regular cookies. 1-2 cups of chocolate chips

For nests, shape the dough into 1 inch round balls and place on cookie sheet. Indent thumbprint. Bake and remove from oven and again indent while still warm. Insert grape or strawberry or raspberry jelly in the indentation and let cool.
