Pecan Squares (Squirrelly Cakes)
 

For the crust you need:
2/3 cup icing (powdered) sugar
2 cups unbleached (or regular) all-purpose flour
1/2 pound (1 cup) sweet butter, softened


Preheat oven to 350F and grease a 9x12 or 13 inch pan. Sift sugar and flour together and cut in butter using two knives or a pastry blender. Pat crust into prepared pan and bake for 20 minutes. Remove from the oven.


Topping Ingredients
2/3 cup (about 11 tablespoons) of melted butter
1/2 cup honey
3 tablespoons unwhipped whipping cream
1/2 cup packed brown sugar
3 1/2 cups shelled pecans, coarsely chopped


Mix melted butter, honey, cream and brown sugar together and stir in pecans. Spread over the crust and bake for 25 minutes more. Cool completely then cut into squares. Makes about 36 squares.
