Ponque Cake
Ingredients
4 cups sifted presto flour
12 eggs
4 sticks of parkay butter or margarine
3 cups granulated sugar
1 tablespoon vanilla
1 tablespoon almond extract
1 tablespoon brandy (felipe 11)
Instructions
Preheat oven to 350*f. prepare baking pans.
1-Seperate the yolk from the white
2-In mixer bowl cream butter and sugar until light and fluffy, add eggs yolk one
at a time, mixing well after each addition. Mix in vanilla, almond extract and
brandy.
3- Add flour little by little until finish and mix for 5 more min.
4-beat eggs white until stiff, but not dry
5- Gently fold egg white into batter. pour into prepared pan and bake.
Good for a 12x3 pan
When its done remove from pan and set aside to cool while preparing the syrup.
SYRUP
Ingredients
2 cups granulated sugar
4 cups water
2 tablespoon almond extract
3 Tablespoon brandy
Combine water and sugar in a saucepan and stir over high heat until well mixed,
add almond and brandy, let it cool a little bit but not for too long.
Start to bathe the cake from the center out to the sides.
