Rum Balls

Rum Balls - Version 1

 

2-1/2 cup vanilla wafer crumbs

2-1/2 icing sugar

½ cup melted butter, or margarine

½ cup rum

1 cup chopped walnuts (optional)

1/2 cup cocoa

chocolate sprinkles

 

Mix all ingredients except the sprinkles together in a large bowl.  Spoon out and roll into little balls.  Cover balls with sprinkles.

 

Rum Balls - Version 2

1 1/2 cups vanilla wafer crumbs (about 50 cookies)
1/4 cup Bacardi dark rum 80 proof
1/4 cup honey
8 oz. (2 cups) ground walnuts
confectioner's (powder) sugar

Combine all ingredients, except sugar, blend thoroughly. Shape into
small balls about 1 inch in diameter.  Roll in sugar.  Store in tightly
covered container.  Makes about 2 1/2 dozen.
