Toffee Bars (Squirrelly Cakes)
 

1/2 pound of sweet butter
1 cup light brown sugar, packed
1 egg yolk
2 cups unbleached all-purpose flour (you can use regular all-purpose)
1 tsp. vanilla extract
12 ounces semi-sweet chocolate chips
1 cup chopped walnuts or pecans


Preh-heat oven to 350. Grease a 9x12 inch baking pan.
Cream butter and sugar, then add egg yolk, beat well. With a whisk, stir in the flour, mixing well. Add your vanilla and whisk. Spread into the greased pan and bake for 25 minutes. Now cover with the chocolate chips and bake for about 3 or 4 minutes. Remove from oven and spread the melted chocolate chips out evenly. Sprinkle with the chopped nuts and let cool completely in the pan before you cut. Makes about 30 bars.
