Zucchini Drops (Cookies)
3/4 cup
of butter
1 1/2 cups of white granulated sugar
2 eggs
1 1/2 cups, grated zucchini, unpeeled
1 tsp. vanilla
2 1/2 cups all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1 1/2 tsp. cinnamon
1/2 tsp. salt
1 1/2 cups raisins
1 cup chopped walnuts
Cream butter.
Add sugar and cream well.
Beat eggs in, one at a time.
Add zucchini and vanilla.
Stir remaining ingredients togther and add.
Mix well.
Drop by spoonfuls onto a greased baking sheet.
Bake in a pre-heated 350 F oven for 12-15 minutes.
Makes 5 dozen cookies.
